Recipe for cactus scrambleCactus Scramble

Heuvos con nopalitos
by Ed Keenan, Author of Nature & the Southwest

 

Ingredients:

Cooking oil or bacon drippins’

½ c chopped onions
¼ c sun-dried tomatoes
6 eggs
¼ t oregano
¼ t ground pepper
¾ c diced nopales  (nopalitos)
Salt to taste
Cheddar cheese or chile salsa for garnish

(Try adding diced ham, wieners or Polish sausage)

 

Preparation:

In a large skillet heat 3 T oil or bacon drippins’.

Sauté onions & sun-dried tomatoes.

Beat eggs thoroughly & cook with onions and tomatoes.

Stir in diced nopales & cook only until heated.

Season with oregano flakes, salt & pepper.

Garnish with shredded longhorn cheese or salsa.

(Goes good with a side of refried pinto beans &

flour tortillas.)

Serves 5.
